Weekend Wrap up

Yesterday I took a day off from blogging, but I’ll tell you it wasn’t super exciting food wise. I had lots of caffeine and crashed with a headache. I also had a huge breakfast consisting of 2 biscuits, sausage, grits, and eggs. That was pretty much my breakfast and lunch. Here’s one of the biscuits with sausage tucked in. 015

I had a Morningstar Farms chik patty later in the day, on an Orowheat thin, with Laughing Cow light cheese and spinach. 019

Also I had a carrot, hummus, and a pickle. 021

I happened to see some homemade mudflaps while on the road. Just thought I would share.007

Moving on to Sunday, for breakfast all I could muster was an egg sandwich, even though my boyfriend wanted fresh juice and pancakes. He’s still sick with a sinus infection or something, and I won’t make him pancakes and juice. Or give him early Christmas presents. I’m so mean.

Breakfast was an egg, cheese (havarti) sandwich, on Nature’s Pride whole wheat, with coffee and a satsuma.

Shortly after we went to my parents’ house for lunch. We were greeted with snacks and more coffee. Also carrot, apple, lemon juice for the invalid.

We made pizza today! I’ve been thinking of giving up dairy, and ever since then I’ve been wanting cheese like I’ll never have it again. The first pizza had olives, onions, artichoke hearts, sun dried tomatoes, herbs from the garden, and cheese.059

The second pizza was half herbs and cheese, half pepperoni. I ate a couple of small slices of pepperoni.067

I’m excited for Christmas, I don’t know about anyone else. We finally got our stockings up. Well, I just bought them yesterday, we’ve never done stockings before. 048“A severed foot is the ultimate stocking stuffer” – Mitch Hedberg

When we got home, I started on 2 projects: freezer burritos redux, and steel cut oatmeal.

The freezer burritos this time have chicken, refried pinto beans, black beans, rice, havarti, green salsa, green onions, and green bell pepper. Very green.084

Three of them are vegetarian, four are chicken. I had leftover chicken and rice, but no beans.

I snacked on a piece of brie (because I needed more cheese today), and had a cranberry juice with club soda.086

I’ve decided that Cran-Grape smells like Kool-Aid. Booo! Real cranberry juice is the best.

The oatmeal is cooled off and in the fridge (I made 4 servings), and everyone else is asleep, so I suppose I should follow suit.

Snow!

It’s snowing right now in Baton Rouge. Ok, so it’s mostly slush, and not sticking to anything, but it’s snow! It rarely snows here, although it did snow last year around mid December. All of the residents turned into excited 5 year olds, making snowmen and having snowball fights. Here are some pictures from 2008:snow! 025 snow! 017

When it threatens to snow here, it’s like SHUT…  DOWN…EVERYTHING ! Seriously, schools close, state offices, ferries, and interstate bridges. My boyfriend, who is from New York, just shakes his head in wonder.

Moving on…

For breakfast I had fage 0% and honey.002

A bit later I had regular garbanzo beans seasoned with Tony Chachere’s.005

Yes, I keep vital seasonings at work. You never know when you’ll need ‘em.008

For lunch I had beef stew from the freezer, and TLC crackers.013

I’ve never had these Fire Roasted Vegetable crackers before. Originally I bought them to go with black beans or something like that, but today I wanted crackers!015

Not too sound too obsessive, but we usually don’t keep crackers or chips in the house. This is because I will eat them all in a day. If I buy them for work, I tend to dole them out per serving and not for every meal. Nuts on the other hand…

After lunch I had most of a milk chocolate bar. 017 021

Also a couple of handfuls of lightly salted cashews.030

When I got home I found that my uncle had sent me a package! And it contained food!036

I had a hefty slice with coffee. It is delicious – thank you Uncle John!

This day needed more cheese, so I made black bean and cheese quesadillas. Also included: green onions and jalapenos.045

Gross Baby Food

For breakfast I had a Clif bar.048

I know I know, breakfast of champions. It was tasty though :)

I snacked on nuts and granola.047 055 I need little dishes for work. Sometimes I just leave food in a measuring cup (especially nuts and granola) and snack out of it, but it might be more cheery to have little bowls for food.

Lunch was split pea soup. We usually make big batches of soup and freeze several servings in quart sized bags for easy meals later. Mr. Greens labeled this one:

I will definitely make more split pea soup this winter, and next time cut the ham in half.

A snack later was a few more cashews, and an unphotographed Cascadian Farm bar. One of my coworkers gave it to me awhile ago, for some reason I’ve been hoarding it until today.

I thought it was pretty good, but not as interesting as I imagined it would be. It was a typical granola bar, slightly hard and slightly chewy but mostly sticky. The biggest pro was a minor coconut flavor aftertaste.

Dinner was leftover jambalaya. 064

*Update* My eyes were so dry all day from wearing contacts, but it was nice to be able to see people’s faces down a hallway for once.

Pseudo-Indian dinner

I had the day off, but a few appointments to keep. I started the day with an egg and havarti cheese sandwich on my mom’s sourdough bread. It was so delicious, I want another one just looking at the picture.019

I don’t know how, but we ended up with 6 eggs that were expired by a couple of days. I used 4 this morning for our breakfasts (they were still good, by the way, and probably not even a Grade B). If I weren’t worried about health problems I would’ve force fed Mr. Greens two more hard boiled eggs for an afternoon snack. I know I sound cheap, but it drives me crazy to throw away things like eggs, bread, lettuce (or spinach).

I went to the eye doctor this morning, and had a fitting/consultation for contacts. It took over 3 hours. I felt bad for insisting that boyfriend come with me. He’s sick, and studying for finals, but he was a trooper. My eyes were very tired after being poked and trying on 6 different pairs of lenses.

For lunch we stopped at Subway. Here’s an old picture (I got the same thing):024

For dinner we had a thrown together dish, using a curry simmer sauce I picked up at Target. 021

I had a leftover chicken breast to use, frozen chickpeas, and red bell pepper, squash and zucchini.024

It turned out pretty well, if I do say so myself. 035

Later on, I helped Mr. Greens study for his finals, and I baked these snickerdoodles to help our brains.043

The cookies aren’t really that good, hate to say. I bought a tub of refrigerated cookie dough from a coworker for her daughter’s school. Nothing’s really wrong with them, but I prefer homemade cookies with real butter and sugar.

A Very Craisin Breakfast

This morning my boyfriend made me breakfast. Oatmeal with walnuts and craisins – yum!007

The last couple of mornings have finally been cold. Well, cold for here. I think it’s 50 degrees right now.

For a snack I had ye olde carrots and hummus.010

For lunch I had leftover broccoli, cheese, shells, and shrimp. It was good. I like when red pepper flakes get stuck in my gums. Maybe I wouldn’t like it so much if I had fresh pepper flakes.012

This evening I made jambalaya. It turned out very well.020

It’s kind of hard to see details in my nighttime pictures because of the horrible lighting in my apartment. The jambalaya was almost exactly like the one I made a few weeks ago here. The only difference was I used red bell pepper, and I had a few problems browning the meat because my boyfriend wanted to stick his fingers in the pot and steal sausages.

I also ate a Luna bar which I didn’t photograph, thinking I had when I bought it. It was a minty chocolate one. Probably the best Luna bar I’ve had so far. What are all the differences? I see they have a sunrise bar, a tea cookie, and other bars. That’s how they getcha. Clif has made me curious about their Nectar bars, but I’m being strong.
