I have been dropping the ball on taking food pictures and blogging in general. Oh well. One of these days I’ll be a good blogger.
Today I had no breakfast mostly because I slept in. I went to my parents’ house where we had artichoke dip and crackers .
Then we moved on to lasagna, salad, and stir-fried broccoli. I was too busy wolfing down food to remember to take a picture of everything. Luckily I took a picture of the wine we had. It was a mellow red, very smooth.
I went to my parents’ without el boyfriendo because he’s still sick. My brother is sick too, hopefully not with the flu. I feel for them both. What they need is a good cup of Gan Mao Qing Cha. It’s good for what ails you!
For dinner tonight we had salmon burgers and avocado. Mine was sans buns. (I was going to make a joke about my own flat posterior, but let’s skip it.)
Afterward I was still hungry, so I had what I call “healthy junk food” – a handful of roasted chickpeas and kale chips.
^This plate times 3. I ate 2 whole heads of kale surprisingly fast.
To catch you up on the past 3 days or so:
I’ve had yogurt for every breakfast (surprise, surprise)
On National Blogger Vegan day I ate yogurt, honey, cheese, and beef stew. It was my way of fighting homogeneity I suppose. The stew was made by Mr. Greens – expect to see leftovers soon. I froze a few servings, but I already want more.
I also bought some dried chickpeas and soaked them overnight. I must’ve done something wrong because half of them sprouted small tails.
I forged ahead anyway, and used all of my pots to cook them.
This batch produced 4 full quart mason jars, and a gallon sized ziploc bag. The bag went into the freezer, but we’re planning to make hummus, roasted chickpeas, and perhaps and Indian inspired dish in the upcoming weeks.
It was definitely less expensive than buying cans. I’ve already made a batch of roasted chickpeas.
I also had 2 good Thanksgiving inspired lunches. At work I had a wrap that consisted of deli turkey, stuffing, and cranberry sauce.
On Saturday I had a similar lunch with no bread involved (I’m not anti-carb, it’s more of a calorie thing). My plate had stuffing, turkey, cranberry jelly, sweet potato mash, and a few small carrots.
My mother asked me if I wanted traditional Thanksgiving food and I said definitely not. (We’re doing an alternative Thanksgiving). I think I’ve had enough stuffing for one year.
On Saturday night I went to Whole Foods and bought a few supplies. I also tried one of these. A Peanut Butter and Jelly Larabar.

My first thought was this is dry and crumbly with a chalky texture and too much peanut taste, then with another bite I tasted the fruit flavor, and started to like the texture more. By the time I finished it I was making happy noises and licking the wrapper in search of crumbs. Two unexpected thumbs up.

I don't think the tails on the chickpeas are anything to worry about. They smell bad when they've soaked too long. (I learned that the hard way.)
How do you make kale chips?
Let's see. Preheat oven to 400. Take one bunch of kale, wash, and tear to pieces. Dry kale. Sprinkle or spray with oil, sprinkle with salt or cheese (parmesan is good). Bake for about 6 minutes. I would use tin foil on a baking pan before laying the kale down. The kale can touch a little bit, but it's best if they have a little room.
They're good when crispy like chips. If I take them out of the oven too soon I just pop them back in. I also have to eat them alone, because they're very LOUD. ha!
