Beans ‘n’ Greens

It’s Monday and my boyfriend has been sick for a few days, with a cold. Boooo.

Breakfast this morning was plain greek yogurt, granola, and a crumbled bit of a peanut butter granola bar.


I had brought several pieces of fruit to eat, but after this combination I was not hungry.

Lunch was mujadarrah (lentils, rice, and fried onion) 026

and a small chicken salad039

which consisted of 2 ounces of roasted chicken, 2 teaspoons of mayonnaise, half a tablespoon of coarse ground mustard, and a few walnuts. Yum.

I also had a few carrots and radishes on the side029

After lunch I broke into my Sugar Cookie Sleigh Ride tea. Target finally had the holiday Celestial Seasonings teas last time I went, yay!


I liked it, although it wasn’t very strong. It certainly smells good! Like cookies and orange peels – ahhh.

On the car ride home from work I ate a honeycrisp apple.  These might be my favorite apple.


For dinner we decided on red beans and rice, cornbread, and collard greens. I had bought this bunch of greens a few days ago and was anxious to use them.



I used a little butter in the pan, clove of garlic, quarter cup of onions, red pepper flakes, then wilted the greens to nothing, and added a little balsamic vinegar.I will be honest and say that I have had better greens and that these were a TAD bitter. But you don’t have to follow every old southern recipe and put half a pig in with your greens to make them good.


A little sausage in the red beans never hurt anyone though. ;)

*I just realized I ate beans and rice twice today. Is there anything wrong with that?
