Taco Salad and FSM

This morning for breakfast I had a fitnessista inspired breakfast cookie. I won’t dwell on the specifics, because it wasn’t my best effort. But I know what the problem was – I wanted to try mashed banana in my cookie, but I didn’t have any fresh, so I took a frozen banana and nuked it. Let’s just say the flavor was a bit off this morning.

I only ate a little bit of it. Oh well, I’ll definitely try again!

A mid-morning snack was a very crunchy carrot and hummus. I gnawed on it a little before I remembered to take a picture.

The gym was pretty good today. I did 35 minutes on the elliptical. I know I need to do more, but thinking about it kind of stresses me out so I don’t.

For lunch I brought beans and rice, and a quarter of an avocado. A coworker offered me tomatoes, salsa, and lettuce mix. then I remembered that I had half of a flat bread – taco salad!! The flat bread toasted so nicely, it was similar to a flaky tortilla bowl.007

There were about 10 grape tomatoes under the mound of beans and rice and salsa. I could eat this again right now!

Snack mid afternoon – I wanted Halloween candy, but I ate a Kashi bar instead.

Dinner was a nice surprise. I came home to the smell of cooking! Mr. Greens made homemade meatballs and spaghetti. All I know about his meatballs is that he uses part beef and part pork. The rest is top secret.

My serving looks a little like the flying spaghetti monster.
