Chickpea Curry + Sweet Potato Fries

This morning I had oatmeal + coffee. Steel cut oatmeal, walnuts, raisins, craisins, and a sprinkling of Ginger Snap granola.001

I don’t use milk or any extra water. I suppose years of avoiding milk has made me like it that way. I still like Cream of Wheat with a dot of real milk. Soy and rice milk are too sweet, even the plain versions.

For a snack I had carrots, bell pepper, and celery.006

Lunch was beef stew, and TLC roasted vegetable crackers.017

‘Twas good. While I was trying to eat my lunch, I heard my coworker’s Christmas music. For some reason this just enraged me! It was skin-crawlingly bad music, played a little too loudly, and she was laughing and apparently enjoying herself, which made me feel even more Grinch-like. I stopped eating halfway through lunch because I was upset by a crooning version of “I Saw Mommy Kissing Santa Claus.” [edited to write: Chillax!]

I had a Clif bar later in the day,024

and Gingerbread spice tea.027

For the record, I usually drink coffee at 2:00 every day with my coworkers. I drink coffee 3 times a day, (and tea) although I don’t always finish each cup. I would like to cut down to 1 or 2. Ack! The morning coffee is good, but I also look forward to having coffee when I get home. The boyfriend and I sit down and talk for a moment before making dinner or watching TV, or studying. *Sigh* Back to booze!

Dinner was a chickpea coconut curry with broccoli. Remember this stuff?021

I spooned a little into a pan, along with chickpeas and rice. I steamed broccoli in the microwave and added it, along with red pepper flakes.039

I also made some sweet potato fries. They’re pretty good straight from the pan. They’re also tasty in chickpea curry. Just for future reference.054 051

I can safely say that today I got enough vegetables in my diet.

Tomorrow I’m off from work, but I have tons to do! This stress Reduction Kit might help!
