Early Thanksgiving

Breakfast: Stick-to-your-ribs Grape nuts with plain soy milk at home. I cut up half a grapefruit and ate it at my desk later.





Lunch: Sorry to say I didn't photograph my lunch. It was a salad, and a grilled cheese sandwich. I also brought carrots, bell pepper, and grape tomatoes to dip into homemade hummus. Don't worry, I'm planning to eat the same thing tomorrow.

Dinner:
A baked sweet potato. Instead of roasting it in the oven, I microwaved it. Verdict: not bad. Not quite as tasty, but microwaving shaves off about 40+ minutes of cooking time!
Served with leftover cauliflower mac & cheese AND field peas. This plate was like vegetarian Thanksgiving dinner. Does this look like a lot of food? It was, and I still wanted seconds because everything was so tasty. (I only had another spoonful of beans.)
After dinner, we went to Highland Coffees to refill our stash. I love Highland! I've been a regular, loyal customer for years. The Italian Blend is our old standby, although I like Mexican Altura and Colombian Supremo.

That looks like a great Thanksgiving menu. I'm ready!

I think I've found just the thing to add a little kick to the mac, cheese &cauliflower - honey mustard!

Yeah! The mac & cheese had stone ground mustard in it, but I think it needs more! And more pepper.
